Jace, here's a thread from MTBR that might interest you - Ski bike kits conversion available CHEAP! - Mtbr.com Forums. This guy seems really into Ski-biking and has offered to do demos on HooDoo and Mt Hood.
I would mind trying it out myself.
Durango Mountain Resort, CO has the International Skibiking Festival each spring...
I got to try it out on the clock one year with a $6000 Ellsworth w/ 6" of travel in the front and 8" in the back.
the funnest part is that you have no brakes (ie no tire/rims)
the bottom bracket is removed and dirtbike pegs are inserted so I was wearing hiking boots.
I droped into my first run, a blue with some piles of powder, and I can honestly say that it was one of the fastest runs on that flat ski resort i ever had. 0-45+ in less than 6 seconds...untracked powder turns were the best and i got some face shots on that bike too!!!!
to stop, you have to skid the back ski out from behind you in a motion similar to snowboarding or telemarking. oh, they don't stop on a dime either.
there is one skibike parts supplier in the USA and he is out of Albuquerque, NM so he always shows up with a bunch of demos in Durango. You can buy a set of skis that have a welded triangle to accept quick release skewers for around $300 and then you can put them on any bike you like!
