You are asking a question that can fill several pages if all of the possible answers are posted. I'll start off with the Icom v8000 is a 2 Meter Radio and requires a 50 ohm load. That is the simple answer to your question. The type of mount you want (magnetic, NMO or trunk lid mount) or the where you will be using it (middle of nowhere, small town or big city) you did not mention. I am using one magnetic mount and two trunk lid mounts on my daily driver. I have one for 2 meter APRS that uses a magnetic mount. I have two trunk lid mounts for my 2 Meter/70 CMeters and my tunable HF antenna.

I have a 2 Meter antenna for my APRS on my rightside rear door near the top on my FJ40. I think the brushguard will get a dualband for voice and HF whip. I have nothing on the brushguard right now.
Nothing magic about that radio. It's a 2m radio like any other.
The Larsen 150 series antennas are cheap, excellent, tough and the whip is cheap to replace. For a trail rig, they get my vote. For a roof mount, the 5/8 wave is great. If you are not sure about your ground plane, get the 1/2 wave version.
If you want a mag mount, the Wilson 2m antenna is excellent. They are a brand from the CB world, but I've used their 2m antenna for years, loaned it, abused it and it's still good.
There are many good choices and none of them are necessarily bad.
Mount as high as possible, pay attention to grounding and ground plane, and it will be great.
