I can get a nice deal on 285 75 r18s. My 03 still has no lift and current runs 285 60 r18s.

Will the 285 75 fit without rubbing? I assume yes, considering the width stays the same, only the height increases...

I don't think you need a body lift. I have 295/70/18's with the OME lift from Slee and with front spacers from Just Differentials and they do fine with a very small amount of trimming.
 
But, the OP asked if they would fit without a lift. A 285/75/18 is a true 35. They will not fit without at least a lift. I don't believe they will fit correctly without a lift, body lift and spacers.

Spresso or Hoser might chime in. I think they are both running 285/75/18's. They would know for sure.

I believe Spresso said he was contacting the front fenders on compression with his until he did the 1" body lift.
 
My 295/70/18 are 34.86 and being 10mm wider i figured they would be about the same as the 285/75/18 at 35.45 inches. But maybe I figured wrong.

After using spacers up front, the contact point was the pinch weld at the back outside bottom of the wheel wells. It only hit them under compression. Bending those (or cutting them) would remove the contact. Is the extra height of the 285/75/18 too much to clear that same point or is the contact somewhere else?
