Some 105 have factory additional fuel tanks (but they don't have the spare under the car). There is some space above the spare that could be used. Is there a fuel or water tank on the market that would fit in there?

Is yours a 100 or a 105, 100 series HDJ-100R 1HD-FTE Australian models come out with the spare underneath with a 45 litre sub tank above the spare, is this what you are after?
Yup, that one will fit above the spare and still allow you to retain the spare in the factory location. I have one waiting to go in, but I have a problem in that Toyota relocated some EGR equipment to this cavity for the 2004 model year (not sure what other years) US-spec Cruiser. I just need to figure out a way to relocate it again...

I had a factory sub tank with the spare underneath my 2004 V8 100.. I've replaced it with a long ranger combo tank and I obviously had to relocate the spare.. so I believe there is at least one sub tank that allows you to keep the spare underneath (which is the factory sub tank).. you can see a couple of pictures of the tank in this thread
Siglo, on an aside, is that cylindrical airbox stock on your 100? It kind of looks like one off a HZJ70/80. The bottom line I'm getting at is, how did you make room for the second Optima battery? Did you vehicle originally come w/ the rectangular airbox w/ power steering fluid resevoir located behind it and the AHC resevoir behind that against the firewall?
I didn't have to do much for the second battery, I've only slightly moved power steering reservoir to the right..if the optima was a tad smaller, I wouldn't have needed to move it at all.. you can see it in the 10th pic of that thread.. the AHC reservoir is in its stock location.. best4x4xfar was correct when he answered your questions in this thread..
