Worst case if a winch is needed to get the truck on the trailer, you could probably use a pulley (hooked to a front trailer rail, etc.) and do a 90 degree pull with a winch from the side of the trailer... Of course, you probably need something holding the side of the trailer from sliding too.

We've done this, but you don't really even need the snatch block.. just pull alongside the tow rig, and angle the trailer. (In this pic, we had to use a snatch block, only because we were pulling an 8,000lb vehicle up, but his line is going from the rig right to his winch, so ya get the idea.)

That or park the trailer in front of the cruzer. Unhook trailer from tow vehicle. Connect tow vehicle to cruzer via snatchstrap. Pull fwd (pulling cruzer onto parked trailer) Hook up to trailer and done...

Whoa awesome thanks for all the replies everybody. I've been pretty busy lately (exams coming up :() and haven't checked on here in a few days.

As an update, I talked to the mechanic the other day and he said he wants to check a couple of things (maybe the EFI system stuff you mentioned strong_toy), so I should be hearing from him sometime this week. If not, a trailer may be in order guys :/ . I am leaving for 3 weeks May 9th for some training with the national guard so I'm not sure what to do.
 
I don't know much outside of the 80 realm, but I'm with alky on this thinking it's an electrical issue. On the 80 series there is a large wire bundle that runs over the back of the motor and near a lot of hot parts that usually ends up eating through the shielding. Eventually there is a electrical problem just like the one you speak of.

I especially think it's electrical considering it was motoring fine and then just cut out (considering you are positive you are getting fuel pressure).
 
Update for you guys. Got home from army stuff the other day. My dad had it towed to a different mechanic while I was gone. It's running now. Was a relay to the ECU. So now it runs but I'm still having issues with it. It likes to hiccup and die so I'm thinking maybe I have a fuel pump issue? Lot's of things surfacing with this vehicle it seems :(

Bought a new air filter today (err, ordered one for it. Should arrive at autozone tuesday) so hopefully that will help. Gonna run some fuel injector cleaner through it as well.
 
have you checked the wiring harness at the EGR? I'm telling you, that is 99% of the electrical gremlins that the 80s have. Right now jfz80's rig will be smooth as butter but occasionally when he gives it gas it will stumble, backfire and flat out stall. If you grab his wiring harness (damn that sounds perverted) and jiggle it, it will cause his motor to cut out. There is a short in there from where the harness has melted and the wires are exposed.

Give it a look. Start the truck and wiggle the wiring harness and see what happens.
