Inside the cab the drivers floor always gets hot and the metal bracket hold the dash next to the gas peddle gets warm. The fire wall with the steering column going through gets to 160°, the bracket I mentioned gets to 115° but what makes me nervous is the manifold is getting up to 618°. The master cylinder is also getting hot from the manifolds high temp.

What should the manifold be temp wise and what are some things to check? The motor never gets hot even when pulling a big hill.

An internal combustion engine produces very hot exhaust gasses. 618F is not that hot for an exhaust manifold. My Weber grill gets that hot.
