Post 1988 is the one you want, slight differences and all the updates.
 
You want the newest year you can find. A 2wd version usually means you don't need to tear it open to change the output shaft like you would on a 4wd version. The "K" case is thicker and less prone to cracking if you can find one in a 2wd version.
 
I have a 700r4 out of a 1988 iroc z Camaro it's bolted to a 4 speed transfer case, went a different route
so I won't be using it.

No matter what your configuration is, you should have an additional cross member to support your case or cases, the rear of the tranny can crack pretty easily with cases hanging off.
 
K case is a plus, but not a deal breaker. Life will be easier with a 700R4/4L60 as opposed to a 4L60e (electronic). The 4L60 has 4 bolts holding the tail shaft housing, the 4L60e has 6.
