Today I was ready to pull the trigger on new rims and tires and the store got me all nervous if they would fit. I don't want to make a bunch of modifications to my vehicle but I an ready to get off the of the 20's. My plan was the following.

RIMS: Method 703 17x8.5 +35 offset
Tires: BFG K02's 285/70-17

The store I was ordering from wasn't convinced that these would fit without rubbing, spacers or even new control arms.

Any advice from someone that has actually put these rims and similar size tires on a LX 570. I plan to drive this vehicle both on the trail and the highway.

That size wheel/tire will at worst have some rubbing in the plastic/mudflap liner areas, and depending on alignment, maybe none. It won't require any spacers (wheel or spring since i'm not sure which you are referring to) and will not require control arm changes (which would only be required if you needed to do a suspension lift). Worst case is you'll have to do some massaging of the plastic parts. Plenty of threads describing that, but with a smaller 33", you probably won't have much issue.
 
Wanted to add a data point here for future wheel/tire shoppers. I did this exact wheel and tire size on my 2014 LX. It did rub, but as mentioned not much of an issue. I removed the front mud flaps and now have 0 rub going forward. In reverse I am still rubbing the front fender liner but it is very minimal and I will be attempting to just push the offending area out with a heat gun.
