I am going to replace the brake pads. Thought I'd turn the rotors as well. Do they just pop off after the caliper is removed or must one disassemble wheel bearings and hubs and stuff to get the rotor off?

It would be best to refer to the FSM above, you won't disassemble the wheel bearings, but you can take the rotor off to have it turned with minimal effort.
 
No, you don't need to do anything else but take off the calipers. If the rotor is frozen on there, just wack it with a rubber mallet and it will slide right off. I just did this over the weekend, but just got new rotors instead of turning them. I've always had problems with turned rotors in the past, warping and what not. New rotors with ceramic pads are great.
