It is a perfect candidate for a flatbed! You could put a canvas top over the rear seats and a roll cage and then a short flatbed (double cab style) , or just make it simple and go 2 seater just like the one above.

x2 on not using the cat if you don't need it for smog. you should notice a power increase without it. I have one you could buy rom an fj60 in good shape, but i don't know what they are worth. I am in seattle, and you would have to cover shipping... let me know what you think.
oh yeah, and...
does the shifter move at all under hard throttle? might help to see if a mount / crossmember is bad.
all my clunks like that came from my exhaust. nothing a little bailing wire couldn't fix if that's the case...
x2 on jims advice on the fuel cut. without it you will backfire out the exhaust as you decelerate down a hill. I accidentally disabled mine while desmogging and it sounded like a shotgun blast and blew a couple inches of flame out the tailpipe.

cut off the bottom portion, appx. 4" I believe, then weld in 2x4 tube with 2" round tube...

i believe there is a specialty tool that can be rented at many auto parts stores that is designed to remove these. In the past I have done many things and on a number of vehicles.
SOmetimes a good whack with a mini sledge does the trick.
Once I used a 3' bar from above and a 5# sledge full...

what would you consider the minimum specs for moab? (Crawl ratio, lift height, tire size, etc?)

I would jump on it if the truck is in the shape it sounds like it is.
I would be at least mentally prepared to replace a lot more than a head gasket when you start tearing it apart, though. I have been through two 2f's,both tired and mistreated by previous owners, :( and both had very badly...
the width of the rim does make a difference in rolling off the bead. the narrower rim makes a tighter seal, and less likely to lose the bead. that's the way i understand it at least. anyone know differently, i'm wrong a lot?
IIRC I paid $850 ish for four mounted and balanced from a small local tire guy(recently shut down by the man. damnthe man and long live don fleury)
