That's funny. I am growing shishito peppers this year. Just made the first batch to go with dinner tonight. So damn good.
Toss in neutral oil for roasting, then two parts soy sauce to one part sesame oil after, toss, finish with just enough fleur de sel.
That jar came with some ceramic weights that work well when the peppers are stuffed in. Really mashed down. I've had issues with peppers sneaking by the weights to the top, a d use either onion, or a paper towel under the surface of the water (below the weights) as a screen. That works too.

Beyond burger with American cheese, roasted veggies, Dutch oven fingerling potatoes, and Jalapeno poppers stuffed with cream cheese/chorizo. All on the grill, all vegan of course. Quite the gluttonous meal for us, but fitting for such a gorgeous day.
