@jynx there is a green egg forum. Do some reading on there and try to follow a recipe that looks good. There are videos on the egg website for lighting and temp control that can explain the basics.
This is how I do my reverse sear steaks for a good medium every time.
Cook at 300 until 120...
And it stays there...while adding smoke flavor...with no flare ups. Night and day difference from gas. A good remote meat thermometer and you can follow any online recipe easily with a great result. I never could reproduce like that with gas.

Super easy method. Mix half rendezvous seasoning and half brown sugar with a little salt for the rub. Smoke on the egg at 250 for 4 HR. Don't worry about wrapping or sauce.
The spiral sliced hams were super cheap at Kroger so I picked one up and threw it on the egg. Turned out pretty good. Next time I would try a unglazed ham and make my own.
Take it back. I use a cube and hit it with a $15 heat gun from harbor freight for 30 seconds after the cube is lit. Cuts the light time in half at least.
I agree, pizza is hard to master. I've had trouble getting the dough right.
The cast iron is where it is as for searing. I've really gotten into the reverse sear with my CI skillet at 650 degrees.
The new Sams in Madison has a BGE for $849 with stand and egg mate side attachments. The only thing you really need is a place setter for indirect cooking.
It was the first time I have seen the real BGE at SAMs. Seems like a good deal unless it is a slightly cheaper units built by the company...
Grabbed some shrimp and red snapper in Biloxi today on the way home.
Threw the snapper on the egg at 350 with Apple Wood, raised grid skin down for about 20 min. These grills are the shiznit.
I did filets with a reverse sear using a cast iron skillet. Damn they were good. Cooked at 300 degrees until 120 internal. Took off and opened wide open. I put them on when the skillet hit 600 for 90 sec each side. Then rest.

$550 for a medium. I thought about getting medium but glad I got the large. Sometimes I wish I had the XL. Go to Madison Fireplace and check out the different sizes to see what will work for you. They even have a XXL...although it is $4k with...
Madison fireplace is the cheapest place for a BGE. They were running a special for $699 but it might be over. KJ definitely comes with more of the stuff like stands and place setters.
