Damn I'm hungry now! I buy as many tri-tips as I can when they are on sale. Dry rub, sear, smoke for an hour or so and then let it rest. Serve with some potato rolls and fresh veggies and call it good.
 
Made tri tips on Friday nights. I like the classic Santa Maria Style. Pappys make a good rub. Cook until Medium rare on real wood charcoal and enjoy.

Oooo, that stuff looks worthy of a try (saved the link).

After experimenting with different rubs, this cut of beef is just as excellent with any seasoning you top it with..

It's kind of "What flavor do you want tonight?" Slow cook till it shreds nicely for some kind of chili dish, or the medium rare tender slices for the main..(Can you tell I haven't eaten yet.:D)

If a feller wanted to substitute game meat (elk in this case) what cut would he use? I'm thinking backstrap, but haven't been around venison much for nearly 2 decades now. (I'll be hopefully correcting this travesty later this very month)

Its a funny thing, I have never had a Texas style brisket that really amazed me, seems like no one cooks them well here.
West Texas BBQ in Castroville was the only place close.

I found that to be true as well. You can't get good brisket in Cali.

Great now all the "barbecue is pork" freaks from the south are going to chime in.

I've tried that... I like the slow cooking thing the best.

Speaking of Santa Maria style, I stopped by Mission Soledad on the way home from Pismo, and they have the biggest fxxxing BBQ setup I have ever seen. Thems people know how to party!

tri-tip's a very forgiving cut. pretty much anyone with some amount of grilling experience can do a decent job with it because it's fairly well marbled (meaning it's fairly tough to dry out on the grill). it also absorbs rubs well, which means that it can be fairly easily flavored.

In the hands of a good cook, tri-tip can be superb.
