What do you do with it?

This is my 2 night idea (to die for..).

Grill it the first night and serve with garlic seasoned potatoes, salad, and vegi of choice.

2nd night, get some Bueno or Bacas hot red chili sauce..

Chop up the leftovers (if you don't have any, you need to cook another Tip the first night), and slow cook in the chili sauce..

Seared n' smoked or slow roasted like prime rib in an alto sham till it says 124º in the middle.

Red mashed rosemary taters, corn, fresh rolls, some gravy.

Go buy some good fresh tortillas at the local tortilla factory..

I do a mean Tri Tip, Season with Sea Salt, Olive oil and whatever steak seasoning I like, one side sear with a 45-60 minute 400 degree grill...........thin slice....

Yeah they roll with some great cuts, two pack season then freeze pack one and cook the other......

I rarely have day 2 food either.........
 
I rarely have any leftovers to take to work also..
 
I have had tri tip once. No one in my area carries it often. But when I did have it, I grilled it and was super impressed. I cooked three of them, and ate all three.
 
We got a George Forman Roticory cooker, stuff it with bell peppers and onions and set it at 90 minutes, fully coat the outside and leave it...........good too

If you ate three tri tips in one sitting it wasnt a real Tri Tip cut or your full of s***............
 
Usually do a dry-rub

sear it, direct heat each side to seal everything in..

then low indirect heat for a good 45-60 minutes

take it off, let it rest for 15 minutes or so (if I'm patient)

then serve it up..


Once in a great while I'll marinate it overnight in my homemade sauce and cook it the same way...
 
salt, pepper, grill. Only way to enjoy Tri-Tip. By far, hands down my favorite cut of beef. cold tri-tip sammiches on really good sour dough (extra sour) with fresh mayo. seriously... I know whats for dinner tomorrow.
 
Tri-Tip is definatly in my top three.

It is super when dry-rubbed/grilled for 45-60 minutes, and also delish when seared and smoked with oak and pecan for 90+ minutes. Hard to beat!
 
Splitshot, you're so killing me with these photo-food threads.

I was thinking about you while I cooked up 15lbs of ribs for dinner, like how I should get a snap & post up a 'what's for dinner' thread. By the time I finished cutting up the last 8 lbs the guys had rocked through half what I'd already put on the table, and there is NO WAY I'm gonna get between a firefighter & their grub.

For my first time out, da ribs were quite tasty. I've got another 15 or so years to perfect 'em...

Surprizingly, there was about 2lbs left, but they'll prolly disappear after a midnite call or 2.
 
That is a pile of ribs, how many guys? Beef or pork?
