Travertine Tile Backsplash

We just put in a new quartz countertop in our kitchen. I just tiled my backsplash with one row of 4" travertine tile, travertine linear bar, and mosaic tile up above. I can't imagine covering the character holes, and natural look of the travertine with grout. I just spent the past 4 hours taping the face of the tile with blue masking tape as to not grout these markings. What is your take on this? I'm going to put sealer on a sample tile tomorrow to see what it looks like. I sure like the look of this stone.
 
I would not leave the holes there for sanitary reasons...find a matching grout that will compliment or match the existing tile color...that way it will blend in, fill the holes,and still offer some easy clean up. Contact your local tile store/supplier for the proper sealer.
