With my latest toy I thought that I'd start a thread to show off and share their techniques.

Tomorrow will be the maiden voyage for my new cooker. I'll be getting up at 7:00 am to get this little piece of meat going. It's a 7 lb brisket and should take about 10 hours to cook.

First pic is as is and second prepped with rub and resting nicely in the fridge until tomorrow.

well the brisket was good but the wings were terrible. I had problems with the fire box door.

Basically they advertise a 17" fire box. Since most cut and split wood is around 16" I thought they had things covered. Well they reinforced the fire box door on the inside which basically makes the fire box only 16". After fighting with loading the box for a couple of hours I took my wood up to the chop saw and trimmed them to be sure they would fit. After that I could load and go without issues.

Time to get out the welder and take care of that.
