Large Jalapenos
Bacon
Cheese (shredded - I use an 'off the shelf' cheddar/monterey mix)
Hot Sauce (I prefer Sriracha 'rooster' sauce)

Cut the pepper down the middle, seed and insert your favorite hot sauce and cheese...

Wrap the peppers in bacon... I marinate the bacon in hot sauce+beer for a bit then wrap.

Slide on some skewers, drizzle the run-off hot sauce onto the peppers and add heat.

I absolutely love jalapenos.

What temp and for how long did you bake those?
 
Great on the grill also. Smoker even better.

Great recipe!!

I just made a batch of something similar this past weekend:

20 mid to small jalepenos
1 block creamcheese (season with fresh cracked black pepper and a little kosher salt)
1 pack of bacon
20 wooden toothpicks

Prep time: 30-45 mins but all depends on how fast you are at coring them

Directions:
Cut the top off each jalepeno and core inside with a paring knife
Stuff each jalapeno with creamcheese
Wrap each jalapeno end to end (sealing the creamcheese insdie) and secure the bacon with a toothpick

Grill and serve!!!

Keep a beer, salt or backing soda handy for bacon grease flare-ups. I layered a few pieces of foil under the grates to help with the greast and mess. Tip: Turn up the edges of the foil to help "pool" the grease. You may not get all of it but you will get a majority of it.

Edit: You would think the creamcheese would make a mess but it doesnt really. Its the bacon grease. :cheers:
