Will I be able to spray things like the interior roof with a gravity feed spray gun?

Yes. It can get pretty hard to see, and if you angle the gun too far off it will overspray and give a rough not gloss finish. A lot depends on what you're spraying, and wear that respirator with goggles or a full mask.
