Gasket scraper, or sharp putty knife. Make sure you flatten the cover back before you put it back on. Usually the bolts pull the cover down and dimple it making it leak when you put a new gasket on. I just use a hammer and peen the holes back to flat, rather than pulled down toward the gasket.
 
I have an old wood chisel that I use to scrape gaskets off, as well as pry stuck cover plates loose. After I scrape off as much as I can I try to get in with a wire wheel and buff the surface lightly to remove any rust. Since I have access to Isopropyl alcohol I clean both surfaces with that just before assembly.

X2 on what Will said about peaning the cover back into shape.
 
Just got the fan shroud back from the plater, the re-zinc looks nice. Also, decided to sand and Rust Bullet the frame area around the radiator. Still waiting on parts to come back from powdercoat.

Ughhh.... I don't even want to think about all that work. Especially without a garage to work in. If I tried that in my carport, I might as well just start sleeping in my shed...

Update, replaced the timing cover seal, water pump, thermostat, gaskets and reassembled up to the radiator. Went ahead and dropped the front bib off at Concour...just couldn't put the rusty thing back onto the truck.

Thanks for all the comments. Stopped by Concour to check on the bib, their were some holes hidden under the three different paint jobs. They will weld them up and I hope to have the bib back next week.
 
Well, got the front bib back from paint and now I have an almost complete rig again. Put Hella head lights in and new bib lights. Hard to tell from the photo, but the new paint looks Purty!
