A bit of salt and pepper let sit for four hours in fridge and 3 hours on smoker over hickory

Very smokey and fatty.. got my fish oil in with this one
 
YMMV but I suggest trying alder next time you smoke salmon (and trout). For my taste buds hickory, mesquite, etc. (woods typically used for red meat), overpower salmon. After smoking copious amounts of salmon over just about every type of wood I discovered why indigenous peoples from wild salmon country preferred alder.
 
Cedar is my preferred choice for salmon. Plus, I can get a raw cedar fence post from the hardware store for a buck.

I live in NM. Alder is unheard of. I use light smoke on fish... Send me some to try out :):):)
