Slid down a muddy hill when the one of the rears suddenly dropped a foot into a rut.

The biggest problem I have is that the headlights point down like 15+ degrees, though upon first inspection it only looks like a very small gap gained between hood and headlight gasket.

What does the headlight attach to? Hopefully it's not bolted to the frame or something :)

Impact occurred on front ironman bumper (which was not fully mounted.. stupid me) and then slide onto the quarter panel / fender panel.

Yikes! I assume some time with a pry bar should be able to get your headlights to point in the right direction again.

Your bumper wasn't fully mounted?
 
There was a thread on this a while ago. There's an adjusting screw on the lx. I thought about messing with it but the local Toyota dealership only quoted $20 so I had them do it. I didn't have any damage though....

Yeah I ended up delaying it over and over, until I finally decided to pay somebody to do it (drill the holes for the final bolts) right before this happend. Haha!

Hmm Lynch, you think it's just the adjusting screw? That should change the direction of the bulb - but as you can see in my pic, the housing itself is bent.
 
My guess.... Inspect the headlamp assemblies and make sure the mounting tabs aren't busted. Then I'd carefully remove the head lamps and adjust the mounts until the headlamps fit like they are supposed to. And then tweak the headlight illumination level after you get them installed again.
