Stock hj60, h55, what kind of rpm's would i get on the highway w/31's or 32's - sissy i know - but humour me! Also would my mpg be affected that much? I was foolishly hoping it might be better, at least on the highway, than the stock 29's i bought this thing with.

Math! I think you can find enough information on the gear reduction within each gear, the x-fercase and then the diffs (3.73 on the FJ60) to figure out exactly what you would get.
On my FJ60 with "33s" that run true 32.5ish (BFG AT) 2500 RPM is about 65 mph if I recall correctly. 3000 RPM is about 75-77. Thats counting the ~14% rubber over drive I get.
29 -> 31s will make your speedo about 7% off, so if you are going 60 you'll really be going ~ 64. Thats fuzzy math of course.
