Need help on what Load Tire to go with based on my needs

I just picked up a pretty clean 2005 GX. Besides brake pads, tires are going to need replacing failry soon as 2 of them aren't looking great. It currently has 265/70/17 Cooper street tires on it.

This vehicle will be used as a somewhat daily driver, will see a handful of easy trails per year, and will at most tow once a year if I need to rent a trailer for house projects.

I am looking for a AT tire which I know limits my options. I have used the Copper AT3's on my last 2 vehicles in a load range E. Tires wore great, but the ride was lacking - rough. The wife will be driving this mostly and likes the cushy ride. Not sure if it matters, but within the next year it will have 5100's on it for a super mild lift.

What I want to know is based on the vehicle weight will a load range C feel soft? I'm not really sure what I should go for. I do know if I don't want Load range E, I will have less options, but I do know the Cooper AT3 can be had in a SL load.

Based on my intended usage, what would you suggest?
