White fillet? I think someone got the species mixed up when these were packaged. Lol, any guess on what I have? (Southernmost coast of Texas).

I thought we were talking about sea trout from the Gulf of Mexico, aka speckled trout.
Sea trout from the Gulf is nothing like salmon. It's a pure white fillet, you should always visually inspect larger fillets for worms and cut them out.
Sheepshead is delicious. They feed primarily on crustaceans, which is what supposedly makes the meat tasty like small black drum.

another key to better tasting fish is where you got them, filets coming off fish from muddy back bays or dirty water taste like s***, getting fish from channels or out front as we call it where the water is clean and clear and is moving tastes much better.
Have you ever tried it? We had a dinner once with reds, trout, and black drum. Everyone tried them all and then proceeded to fight over the rest of the black drum. Almost tasted like crab meat, delicious.
yes, ive had it. it is considered a trash fish where I come from, but I do occasionally see it on a resaurant menu.
I accidentally ordered it once when I read a menu as black(ened) instead of black...
he must have been a crappy guide, I don't know any local guys that keep reef donkys.
so were snook and redfish, it was a big industry here for years. Tripletail is another bonus fish when fishing offshore, tough to filet but dang it's good.
yeah they're great but wormy bastards. Some guys don't care, it's dinner, maybe I'm just picky.
A guy I fished with in Florida a few years ago used to keep and eat amberjack. This guy used to guide some on the side. When we were done fishing that day, he was cutting up the fish and dividing it up. I told him I was passing on the amberjack and he looked at me like I had five heads. I showed him the big assed worms in the flesh, and he said "That's what that is?" He continued fileting them, but cut the worms out. My brother in law later told me that the was the last time the guide kept amberjack.
