Killer salmon ideas?

I will say the quality of salmon makes a HUGE difference. Spring Chinook salmon have higher fat content than fall run fish to sustain them while they hold in the river without eating through the summer. A fresh springer is the absolute best! As fat reserves (any run of Chinook) are used up, quality of the meat deteriorates. Fall run fish are good when fresh out of the ocean, but if they've spent much time in the river they start to get pretty dark - much quicker than do the springers. By the time the fish is dark spawning color, even a good brine and smoking aren't gonna save it.

Very common actually. Salmon sushi is almost never eater without some sort of treatment to kill the parasites.

I could not bring myself to eat salmon sushi. The parasite responsible for salmon disease in dogs (often fatal for dogs but not other mamals) is common and reaches it's 'worm' life history stage in it's definitive host (humans, dogs, etc.).

Freezing salmon will kill it, but can't imagine that leading to good sushi. Cooking or fully smoking will kill it too. A light smoke might not.

Worms crawling around in the muscle tissue of salmon are something else like this Anisakis - Wikipedia, the free encyclopedia. I wouldn't eat that no matter how cooked!

From the replies:

A lite mix of dijun, mayo, pesto, minced garlic, some olive oil, creole seasoning for a rub.
Possible adds, or subs: Finely chopped cilantro or finely chopped serranos (always liked a little chili heat in my pesto).

May experiment with the sugar thing later. Above sounds good and easy.
