How does 275/65/18 effect MPH and MPG?

Thanks for the input. My daily driver is a FJ62 so when I drive my wife's LX I drive fast. It's my sports car. We do a lot of quick weekend camping trips with our 1 and 3 yr old so we definitely don't take our time. I need the ability to cruise at 75-80mph effortlessly. When pulling camper, I usually cruise around 70-73mph. My camper has brakes, but I wanted to make sure my wife didn't notice a difference when braking around town (we live in the city and everyone cuts you off no matter how much space you leave in front of you). I'm hoping 1" larger won't make a huge difference. We are going to the LTX AT2 as well.
 
I just upgraded from the OEM Bridgestone Dueler H/Ts to BFG All Terrains - 275/70R18, load range E. Heavier tire, slightly less MPGs, but handling and stability have improved greatly. I'm more than happy with the trade-off. Perfection would be adding OME shocks/springs all around...
