You don't need the cover for it..I have had mine for 11 years, exposed to the sun and elements, no issues, looks good as new! I did replace my wood slats on the nest with some custom aluminum bars and they look great. You may not need the grill gripper...I manage it with the ash tool, or you can use a pair of channel locks. Get 2 bags of charcoal, you'll use it..I always seem to have a an extra bag on hand at all times...also pick up some different wood chips, I use a lot of hickory, pecan, mesquite. I dabble in the fruitwoods, alder, grape, and others as well, depending on what I am smoking or grilling. The probe is not a bad option, while I have one, I rarely use it though.

Ended getting an XL with plate setter, pizza stone, nest, shelves, nest egg handler, and lump charcoal.

Was going to buy a loof lighter, but realized I could do the same thing with a Master heat gun.

I finally got around to using the Big Green Egg. Cooked up some chicken breasts and a NY Strip Steak.

The flavor was very good and it cooked the meat very well. Moist and very easy to cook.

Based on my one time use, I can say with confidence that it was not an expensive purchase and I'll get lots of use out it.

Last pic is the 1200w Milwaukee heat gun I used to light the lump charcoal. Master heat gun was in my shop which I'll grab when I go there next time.

I lit the lump charcoal, waited about 10 minutes, and started cooking. Temperature gauge read 400 degrees when I put the meat on the grill.

After you adjust the air intake and exhaust, the temperature was around 350 degrees the entire time.

It is nice not having to wait very long to start cooking. It does a nice job of cooking the meat quickly (works like an oven) since you cook with the lid down. Also, gave it nice mild smoke flavor.
 
It is in deed a compliment from your wife calling you an "Egghead!" Welcome to the club. I cooked 5, 1 1/2" thick ribeyes on Saturday night. Opened up the bottom vent all the way and didn't have anything on the top vent, wide open. Cranked it up to 750 degrees. Threw a fist full of soaked mesquite chips down on the coals. Salt, Pepper, and a little canola oil on the steaks. Seared them on each side for about 3 minutes to Medium/Medium Rare. Slapped a little rosemary/shallot butter on them while the rested for few minutes and they were perfect! Good luck with your future culinary exploits on the BGE.
 
I cook awesome Pizzas on mine at about 700-800 degrees, its the schnizzle!
