I have a garmin 60csx and wondering if anyone is running this in their rigs connected to a tablet for better display purposes. or would it be better to get a dedicated off road vehicle unit? like the lowrance Baja. I have heard their customer service sucks and difficult to find any compatible maps other than theirs on CD. thanks

There are many, many ways to do this. I use a small laptop connected to my Garmin Vista. Running Google Earth (with GooPS) and Mapsource (using nRoute (discontinued)).
You might look into Overland Navigator or similar. You would still use the output from your 60csx to drive the map.

As for a stand alone unit, the Garmin Zumo Motorcycle units are great. Rugged, waterproof, large bright screens. Install the 24k topos. They are not not a USGS scan but contours and most locations are identical to the USGS maps, and are vector graphics so they will display better when zoomed in.
