The thought of aged pork is scary at best........
The best way to cook a hog is to call my Tongan buddies Tu'a and Paea, dig a hole in the ground, throw in the lava rocks on the fire, and start wrapping the banana leaves. Seriously, you can't beat island style...

This thread reminds me that the geographic zenith of pig farming and cooking is right around Sanford, NC. Wob's map actually bleeds up into NC so the eastern part is filled with the vinegar based BBQ sauce that makes a Pig Pickin' one of the more delicious ways to cook pork. Decavo's recipe is right on. I would split it though and go super light on the smoke and only in the beginning. You can cook it for 24+ hours too... depends on the size.
Lolo + Liam = Hall and Oats.
Edit: There are many great whole pig recipes. I'm sure the Pacific islanders do great things. Cuban pork is second to none... really great stuff. However, a well done southern Pig Pickin is as much about the drunk middle aged rednecks jumping over the bonfire when everyone knows eventually someone named bubba is gonna end up burnt. The flavor of dripping, barky, vinegary pork pairs exceptionally well with Bud Lite and the smell of burning redneck.
