I think I'll run down there and ask them about aging pigs before they cook them... Or either I'll go over to Brown's in Kingstree, and ask them.

ah - SC has a Pickens County as well. That's where Clemson is located.

I figured that was the case, but I just wanted to clarify.

Liam is a good guy and probably a good chef, but he doesn't get that the whole point of bbq is to make something great out of basically nothing. That's its charm and appeal. I can't imagine that you would age something you were going to slow cook like that.

i agree with this....

when slow cooking age doesn't matter nearly as much, however, it will still enhance the end product.....probably not by much, but it still would.
 
For what it's worth, I'm with wob on this one.
