Gonna cook a whole hog this weekend - any suggestions?

it's good dude, maybe not gonna fly with the homies in SC but it's pretty tasty.

i've had a "South Carolina" pig roast and it was horrific....way too much vinegar. Those rednecks thought it was the tits and started spewing out that vinegar based recipe while i was dry heaving because it was so fxxxing bad.

you'd think a black dude from SC would know how to cook a pig.....not the case.

Coonasses* know how to cook pig!!!!

I'd pick wob's pig cooking over steve's and liam's, from what I've read here. I'd pick Willie's from Pickens county over all three.

that's a lot of meat... are you going to give it away after you cook it?

We'll split the leftovers among the party hosts, I imagine.


EDIT: how do you know that's a lot of meat? I haven't mentioned the size of the hog, or the number of guests...
 
brine in salt overnight.

Apply rub to outside.
Stuff the hog with butter and bacon (redundant yes but you can never have too much bacon).
Apply sauce close to the end if desired.

only good for a domestic hog. Wild boar needs a lot more to get a decent end result.
 
Dig a hole in the ground

Get a bed of coals eight to twelves inches going

Wrap the pig in wet burlap

Drop the pig on the coals cover the pit with some old corrugated tin

Cook for 24 hours


Drink a s***load of mexican beer while you wait.....

i would brine the whole pig in a big cooler.....and your favorite seasons plus a s***load of salt. I cant remember the salt to water ratio.

When you cook it make sure you dont over smoke it. Stuff it with apples, pears, pineapple, garlic, and a lot of fresh rosemary...

that is how fag would cook a whole hog. keep your faggy ass pig fxxxing recipies to yourself this is mans work go back to your lamb ribs and frilly white bone caps.
 
cuban pig does rival carolina pig. lived in both places... MOJO sauce made by badia is the best.. maybe fsu steve would be kind enough to ship the fat hippie some?
