When in the car solo I use a seat back organizer on the passenger seat as well as a range bag insert.
They hold everything I need while I'm driving. Ice water sunglasses binoculars, radios, snacks, you name it.
Everything easy to reach.

I actually have a similar setup. I bought one of those Duluth Trading seat organizer/desk thingies back around 1995 (?) and it’s been in every vehicle I’ve owned since then.

On the seat back, I use an old body armor carrier. It’s pre-molle and instead uses Velcro to hold the pouches. I had two sets of this so I have a plethora of pouches on the front and a holster and magazines on the back, hidden but within easy reach.
