My grandmother had a bowl with the leftover biscuit mixture that had a towel over it and was kept under the sink. Not sure if she ever cleaned the bowl. She cooked fresh biscuits six days a week by 6am. Got sunday off when my grandad made pancakes. Boy how things change in two generations. Think she used animal lard also. Grandfather ate 4 biscuits a day and tons of bacon. Lived till 96.

animal lard = goodness..
 
the trick is to hand mix the fat and flour first.... stick your hands in the bowl and mix it until all the flour is mixed with the fat.... keep mixing the small pieces between your fingers... like your rolling a wet booger... the flour will look wet or opaque when it's done. then mix the rest of the crap in and cook.

biscuits and gravy...

nice....okay how about a gravy recipe?....you know with bits of pork sausage......holy s*** I'm hungry

mammy usually made gravy starting out with whatever grease was left from whatever meat she cooked, ham, bacon, or sausage,...

make sure the heat is pretty hot but manageable,

sprinkle in some flour, mix it with the grease 'til it scorches slightly and pour in some milk

stir it and work it on the verge of scorching it 'til you have the amount at the consistency or thickness that you want it.

you haven't lived 'til you've had some corned beef gravy and biscuits.
 
biscuit gravy is an art form... G7 did she put in any baking powder?

never noticed any.

x2. biscuit gravy takes practice. the powder stuff don't cut it.


EDIT: on a sad note, she mentioned something that didn't really occur to me.

nobody is teaching their daughters how to cook anymore. so you can see southern traditional dishes like chicken n dumplings disappear within the next generation or 2.

like slick said, anyone can read a recipe but its hands on that counts.
