Interesting, I usually half the jalapenos and put the stuffing on like an open face sandwich, put the little smoky on top and wrap the bacon around them. I also don't boil them I get a pot of water boiling and then put the peppers in and turn off the heat. Let them sit in the hot water while I mix up the stuff. Looks tasty though. And I cut the stems off when I seed them.

I do mine open faced. No water. Mix the seeds back into the cream cheese. Last Sunday:

Mine are open faced as well but to please the 90% of my household that cannot eat fire I tame them down with a pittle parboil tht also serves to soften them up. Good lookin poppers but they need a little smoky to be ABT's I'm thinkin.
