Lets say I'm parallel parked on a city street. I back over the front bumper of a parked behind me, and I'm in N or H, so my rear bumper is on top of his. If I drop to L, do I crush the front end of said car, or does the AHC stop dropping if it senses resistance?

It lowers under the force of gravity, not hydraulic pressure, and there isn't any safety mechanism to command it to stop lowering like a window up or garage door down "anti crush" system. So in the scenario you propose the vehicle will lower until the upward forces of the car bumper being squished exceed the downward MxG forces of your vehicle, or it reaches its selected lower height.
