Utilizing the 110v power outlet we were able to run the fridge, by way of 1000wh Jackery, for 8 days straight without issue. Had I had a good way to mount the Starlink Mini to the 300, the power outlet would have kept the battery charged enough for both and them some. One only needs to remember to activate the outlet via the dash button when traveling. Plug & play game-changer.

I did a similar setup in a Subaru Outback with Goal Zero 1400. However, the GZ us being charge via 12v and my Dometic fridge is plugged to the GZ. I was only offgrid for 5 days but it worked well.

What was the purpose of the 1000wh Jackery? Would it not have been possible to just plug the fridge directly into the 110v outlets for the duration? [sorry, don't know how the outlets function when the vehicle is turned off, etc.]

So that when the car is off, the jackery keeps the fridge on.

Ok...so, that was my question about letting the fridge run continuously while the car was off. I though you could do that without any other accessories. I guess that is not really the case and you do need the jackery.

Correct, unless you keep your car in the accessory mode the whole time, which is prob not a good idea, especially "off-grid". One thing to add is that having a jackery or GZ will give you multiple outlets and you can use portable solar panels to get some juice back.

Got it. So, the OT battery powers the jackery while it is on, then, when the OT is off, the fridge remains working puliing power from the jackery and once you turn the car back on, it charges back the jackery and on and on....

Correct. To be fair, you can do this with any non hybrid car too, as I did with my Outback. My GZ recharge through 12v outlet, while i head to my destination and still powering my Dometic fridge, then while camping, the GZ powers everything. I also have a couple of portable 100w solar panels, if i need some juice back to the GZ.
