I had the same issue and corrected it with different steering arms, i went with the front range offroad keyed arms, it went from my tre boot rubbing to having a generous amount of room.
make sure the choke is coming off , i don't know anything about the carbs you guys are running but that exact symptom sounds like the choke might be on while its hot . some don't mind it and some will die after three feet with out a buck or spit , just blaaa . i had to piss around with a 429...
my qjet works great , i didn't find it to difficult to set up . it runs great off road , and if it floods you just hold it to the floor and crank big cloud of smoke and its happy again .
by the time you went inside and wrote this post you could of pulled the pistons cleaned the grooves and re ringed it .
if it overheated that badly i would tear it down .
cable lubers work great and usually run you around 8$ , some sort of actual dry lube works the best , silicone based or a graphite lube that drys . you can buy specific cable lube .
i saw one in a jeep once . as well as 6.5 gm's in landcruisers .
as far as difficulty level im going to say it is going to take a long time . stock drivetrain wont last 5 minutes and you will destroy the frame with out serious reinforcement .
570 ftlbs and 325 hps is a little much for a land...

i have used the copper silicone with good results on my dirt bike , if i don't ride fast enough the header glows on it so i would think you would be alright using it on a landcruiser .

you should be able to find a diff in nelson or area there is usually some one selling 40 stuff in kelowna or cranbrook on bc 4x4 .
