Looking at your pictures it seems the unit you have may be a whole different model. Unit UI looks totally different. I don't have any of those menu options on mine. Maybe yours has a newer firmware? As for the feed back difference. I would be willing to bet the mic system on the newer 200...

Nice I don't know why, but I tried it that way and it worked a little better, but there was still some issues for me.

Since the Hamilton unit (without ext speaker) is using the AUX channel, if you're using the radio, you won't hear any notifications even though something like maps is in use. The only solution I can see this this is hardwiring the Hamilton audio into the OEM lines somehow.

It seems as if your unit has a different UI\OS I'm guessing because you have an updated 200 series (2016+) They provided me the same "fix" and even though it was better, it wasn't better than the original connection. Running the noise cancelation did fix it for me though or at least got it to 99%.

I'll have to test. I'm going to assume that the CarPlay channel takes priority when in use. What would you like me to test? Being on a call and seeing if Maps is still working?

You have to switch back to the OEM UI to do the HVAC controls

The noise cancellation on my unit was under Settings > Audio It seems like you have two settings to choose from. I wish they would provide the link to the OEM manual or something that digs into these settings.

I think you're spot on Digging through the underlying OS of the unit I did find an audio section and there seems to be a "Call Echo Cancellation" section I was able to get the CarPlay working again...after a bunch of resets I rebooted my phone and that seemed to get the CarPlay back on track...
