I had been contemplating firing up the BGE this weekend and smokin some pork country ribs. Guess now I'll have to get off my arse and do that when I get home from work.

I got a barrel smoker that was made by a friend. I need to make a trailer for it because it is almost too heavy. I do mostly chicken and ribs. When I have enough wood, I put on briskets or boston butts.

Alton brown of good eats made a smoker for $46. He used two large clay pots. It mimics the overpriced green egg smoker.

Wow, I feel like a total city slicker with my puny-ass smoker, but here it is on it's trial run.

1 1/2 TBSP of Alder chips. Brined bluefish and off we go.

Fire in the hole!

Only a little smoke is coming out of the corners.

that is cute.......

Not bad, not great. I learned:

Brine it longer and put more wood chips down below.

Timing wise, the "instructions" said 25 minute. F-that. More like an hour and I had my heat to low too. Hence the lack of "after" pix.

Still tasty, but def on the light side.

Round two this week!

so how did the fish turn out

I wish I could brag that I do.

No s***.

Has anyone made their own smoker? I scored a 55 gallon drum awhile ago.

My dad would make them from two 5 new 5-gallon paint cans. Cut the bottom off one so it would stack on the other. Cut a slot in the side and cut up and bend a cookie pan so it would fit, slope at an angle, and have a narrow outlet through the side of the bottoom pan and act as a dip pan. Put in a small heavy metal bowl to hold the charcol and wood. The upper can had two holes near the lid for a steel rod to run crossways, which held the turkey, ham, etc., by a wire. This smoker worked very well, and was but the fraction of the cost of a commercial smoker big enough to handle a whole turkey. Unfortunately, it's damn hard to find new 5 gallon paint cans now, everything is plastic.

Good friend of mine made a smoker out of an Ancient refrigerator with a porcelain interior... it was great.

Yeah, they work awesome. You can hang a beef quarter in one. Just add a smokestack and you're in business.
