Thai Peanut Sauce

I make my own, but don't really measure the stuff out when I make it...

I use:
peanut butter
chopped peanuts
oyster sauce
fish sauce
sugar
water
chili garlic sauce
toasted sesame oil

(for this sauce, I use the chili garlic sauce shown in the one in the middle in the following pic, but you can use any of three you might have on hand)

I pretty much eyeball the amounts and adjust to my own tastes, but the basic formula works out to be something like:
3 parts peanut butter
1 part oyster sauce
1 part sugar
1/2 part fish sauce
2 parts water (add the water last to adjust thickness of sauce)
1/2 part chili garlic sauce (or as much/little as you like...I tend to use a lot more...)
1/4 part toasted sesame oil

chopped peanuts on top to garnish

mix and pour over or dip into...
 
pretty much the same as above, but i usually add a bit of vinegar.
 
NorCalDoug's recipe sounds tasty.

Here is a little more simple recipe that my wife made up. Everyone that has tried it loves it.

1C Natural Peanut butter.
1/4 C Soy Sauce
1/4 C White Wine Vinegar
1/4 C Lemon Juice
8-10 Cloves of Garlic
2 Tsp fresh ginger (ground)
1 tsp Crushed Red Pepper Flakes or Sriracha red pepper sauce to taste. I like a lot more than this.
1/4 C water

Blend in a mixer.

Set 1/4 of the sauce aside for dipping.

Use 3/4 of the sauce to marinate 1.5" strips of chicken breast for 2 hours.

Grill chicken and baste with the remaining marinade.
 
Tried this one last night. Man it rocked! Might have the wife cut back the fish sauce just a little, but aside from that YUM!
