Yes we do have an Ultimate Taco thread. You Sir just started it.
Is that flank or flap steak?
We, umm, share all of our recipes here, so you know, if yer gonna
be the Taco King, you gotta coach us along, and spill what you did.
What you put together looks Totally F'in Bombtastic.
 
I keep it simple with the meat. This is outside skirt so it comes pretty thin. Just a little oil, coarse kosher salt, and pepper and it goes right on the flat top. You want the cooking surface really hot - best to get over 500*. 2-3 minutes per side is how I like them. Then slice against the grain at a 45* angle.

The chimmichuri is a bit more involved, and my wife normally makes that earlier in the day. We make extra, it's great on eggs, too.
 
I still haven't found a great chimmicurri recipe - any chance you could share yours? For some reason mine is just missing a little something that makes it fall short of some of the good ones I have had in south america.

Responding to this so I will remember to post the most amazing chimichurri recipe tomorrow, when I'm awake again. I have it written down on a receipt; I begged the chef I worked with to share it with me.
 
So good it was practically a staple on our seasonally rotating menu. I hope @ab1985 shares their recipe so we can all make multiple batches for sampling. On everything. Nom nom

@ab1985 , I'm kinda think'in that you need to include quesadas in your new thread.
Tacos and most things wrapped in a tortilla are big around this house.














In fact one of my old college roomates and I would make Cream of Wednesday Burritos.
to use up leftovers.
