I'm heading to Coronado island for Turkey weekend and was planning on catching some surf perch and Hopefully digging up some of the Pismo sized clams they have there as well.

Anyone have some really good recipies for either of the two? We did beer battered clams last year. Good, but a bit too much on the fried breading.

I've never done anything with surf perch, but the asian style frying looks interesting..
 
I like to steam clams in white wine with butter and garlic, or grill 'em on the half-shell with salt, pepper and a twist of lime.
Perch, like any soft-flesh whitefish, I usually cook up en papillote in parchment paper. My favorite combo is: bellpeppers and leeks julienned, a fine sliced orange, and salt, pepper, coriander a twist of dry vermouth. Make fish tacos with the perch. Steamed clams are always awesome.
 
For some reason a steamed clam that is 5" across just seems odd to me :)

then I'd grill that sucker, like a large oyster!
 
lemon onion and dill inside the gutted hull of the perch, and wrap those pismos in bacon after cutting them in strips.
