Well, after alot of search and research I've landed on the following solution:

US Wheel makes a 16 x 8 inch wagon wheel for about $50.00. The original backspacing is 4.25. They will customize them to 2.5 in the factory. They ship straight from the factory with no paint, just 4 steel rims. The total for 4, including shipping comes to $255.00. Best deal I could find. Only deal I could find with the right Backspacing.

Question: How hard will this be on the knuckle/bearings over time?

The Goodyears I got have a 16" diameter. My old rims are 15". I needed a wider rim too to accomodate 12.5. My present tires are 31 x 10.50 All terrains. soon to be for sale.
