Go with the Nawlin's theme and do boudin, crawfish, gumbo, and serve your guests hand grenades and hurricanes.

we used to take a jar of salsa, some velveeta and some hot italian sausage, cook the sausage throw in the cheese and salsa and heat it up, serve with chips, it is.....awesome.

YES, YES, YES!!!!! This is good chit! 1 lb jimmy dean browned up and drained, 1 block of velveeta melted, 2 cans of Rotel tomatoes and chilis, 1 T chili powder. Done.
 
One of my preferred cheesey and meaty dips is to take a can of chilli (no beans) and a block of cream cheese and heat and mix together. I like it better than some of the velveeta type dips...but that's just me...
 
another fairly easy idea is to take a bagette, slice it into rounds. Mix 1 cup of mayo with 1 cup of asiago or Parmesan cheese -- if you have some proscuitto or salami handy, dice it into very small pieces (about 1/2 cup) and mix it into the mayo/cheese blend. Lightly toast 1 side of the bagette rounds. Remove the rounds from the oven, the mound about 1 teaspoon of the mayo/cheese/proscuitto onto the untoasted side and return to the baking tray. Broil until the goo is lightly browned. Arrange on serving platter.

It seems like it might be complicated, but it's really pretty easy...and the results are well worth the time spent.

Stuffed 'shrooms are some of our favorites (cream cheese with bacon or spinach)..:)
 
chipotle artichoke dip
2 cans artichoke hearts,1 can chipotles in adobo,
8oz cream cheese,.5c parmesan cheese, 1/3 cup mayo,3 scallions chopped salt/pep to taste.
rough chop or pulse in food processor the artichoke hearts with 1 chipotle. mix all ingredeints and bake at 350 until bubbly.. serve with chips, bread vegetables, etc......


mushrooms stuffed with crab, celery, onion, and roasted peppers.
