would there be a problem running 255/85/16's at 10/32 on the front and 285/75/16 at 12/32 on the rear of an fj80?

Short answer: Yes, you could have problems.
Longer answer:
What year is your 80? If '91 or '92 then you won't have the VC (viscous coupler) which allows slippage while your CDL (Center Diff Lock) is unlocked. So you should be ok unless you lock the CDL. If you lock the CDL, you will have serious binding in your transfer case on pavement and hard surfaces.

'93 - '97 80s will heat up the VC and it will eventually bind and simulate a locked CDL all the time (unless the VC has been removed). There is a .7% diameter difference between the 2 sizes.

It also depends on the true height of the tire. There is a large difference in tire heights between different manufacturers. I used to run 255s, and the stated height ranged anywhere from 32.7" up to 33.5". The true height could be even further off than that. In any event, I wouldn't do it unless it was an emergency situation.
