best tire for offroad-mud, rock, snow

Nobody has mentioned Bridgestone Dueler Revo 2's yet.. Those are made up to a 315, and are awesome in most conditions except gumbo spooge mud. check em out of you like. Other than that.. Duratracks are also a great tire. Cooper Discovery ST's are on my dd.. they do ok, however those are LOUD, and they tend to cup a little.

I am running the GoodYear MTR's and love them. I have had them in all conditions and the only complaint I have is they are not the best on ice.

If you are MOSTLY concerned with off road capabilities, buy the Pitbull Rockers and be done with it. These are, by far, the all around best tires I have ever run offroad.

Pitbull Rocker Radial Tire 35x12.5 R16 (315/75 R16)

I looked at those too, but I would need some serious convincing to understand why the Pitbull bias are about $85 more per tire than the IROK bias (in my size). The radials look to be closer in price range, though. They might be better, but for a $340 price difference for 4 tires, I'll never know.
