My nephew got into this a few months ago.......Ugly Drum Smoker (google it) lots of aficionado's out there, I was very skeptical, until I ate some of the stuff he cooked in here.......so I borrowed his, loaded it with 8 lb back of lump hickory mixed with same size bag of hickory chunks......the beauty of this thing is ya use fuel that is readily available at most large grocery stores.....you load the basket in the bottom, start 1/2 of a chimney with charcoal, get it gong then dump it on top, it burns from the top down, and this ran for around 18 hrs on this load.....we have the firebox at the bottom, then a diffuser with a water pan then 2 grates.......I am a fan.

When I do Packer Cut briskets, I slice from the point until I hit the fat strip in the middle, at this point I run knife between there and separate these, this way you can slice across the grain on all the meat you serve....this is the smaller section off the brisket.......

If you can see the temp gauge, it is sitting right at 225 and was still holding, after 17 hrs. using it for a warmer while I sliced #2

The UDS is an awesome system.
 
I love my UDS, just finished it before thanksgiving and have used it at least once a week. I've got an extra drum and will be building another soon for a coworker, I'll try to take some build pics this time around.

cooked all this on one rack on Sunday. - heated it up to 230F and loaded everything around 11AM, forgot about it working on some sliders and pulled the ribs and fatty off at 4:30 - they were perfect. Smoker was still rocking at 230F - wrapped the butt in foil at around 6:30 still at 230- pulled it off at 8:30 and the temp was starting to drop a little but I only started with the basket half full of charcoal so it would have gone a lot longer than that loaded -

Yes, air inlets are one 1" gate valve and three 1" threaded pipes with caps. If the gate valve is fully open and I need it hotter I just pull one of the caps and close the valve most of the way. It is fully adjustable that way with only one adjustable valve.
