Tires are 315 Toyo mud terrains and the flares are a custom fiberglass set from @jamisobe that I lined when I did the whole truck.

Its in the Shasta-Chappie OHV park. Its run by the BLM, and has a ton of great trails. Theyre all numbered, so if you google the park youll find a map.
This trail starts from the south entrance, off Iron Mountain Road, and is number 4. If you look on the map, youll see it becomes trail number 5 for a few hundred meters, this is where I got turned around, as there are some pretty steep rock ledges. Didnt want to tackle them alone and get stuck. But the trail is still worth the out and back, if you turn at Hang Glider Hill, or bring a group to try to push through the "Most Difficult" section.
Trail number 3 is mild, but has some good views, and spits you out on the North side going across Shasta Dam. Trail number 1, starting from the North side, is a long climb without much serious obstacles, but offers some amazing views. Give yourself at least 5 hours, if youre doing trail 1 though.
Enjoy! Bring water, it gets insanely hot here in the summer. The long climbs in 110 degrees will eat your engine if youre not careful.

My weekend is Monday-Wednesday. I got my 80 back, finally. My coworkers husband has had it sitting in the back of his body shop for a few months working on it in his down time. Here's how it looks now.
Turned out better than I'd hoped. Now to figure out why my battery keeps taking a crap and get everything installed again.

No doubt those Coopers had some failures. I have the STT Pro, though. I am seeing no signs of issues like the earlier model tire. Have you any discussions that reference failures on the STT Pro specifically?

People have issues with every single tire out there, including the ones that are well regarded (Duratrac sidewall issues, kO2 premature cracking/dry rotting, etc.) Personally I wouldn't write off an entire brand just because of a few threads from 5-10 years ago.
