If I want to check if my water temp gage is ready correct on my dash can I double check somehow? I have a direct temp laser could I shoot the engine block with that? What temp would you expect I should read after running engine

I have rust in the driver side footwell as pictured. Luckily all of it is pretty thin so not major structural issues. It looks like the water was getting trapped under old sound deadening that had hardered and insulation under the carpet.
