You can order what you want. On a stock vehicle the rear shackles are longer than the front. Not sure of the exact lengths. Measure your existing shackles and order based on those lengths and based on whether or not you want to go longer. I recommend that you not go more than 1-1.5 inches longer than stock in the front due to the effects on steering geometry.

The OME greasable shackles are the same as the stock height, front and rear, so no, not the same length front to rear. There are separate part numbers for the front shackles vs the rears.

OME GS2 (Front) = 80mm (Stock 04431-60020 is/was 75mm)
OME GS1 (Rear) = 90mm (Stock 04483-60050 is/was 85mm)

I've got a set of NIB aussie shackles that measure 5" C to C on the pins.

I was planning on using those since they're greaseable and I got bushings, spring pins and shackles for $40 on here.

I'm trying to see how close to level it will sit with CS005F fronts and CS005RB rear....I've already got a rough idea, I'm just trying to avoid it being higher in the front!

Could you swap the ARB shackles in an attempt to get level? Put the fronts in the rear and vice versa?

Absolutely, that said the GS1 is a heavier grade shackle (thicker side plates).
